I was able to follow Julien and his team on a typical morning at the boulangerie du Square. The routine is flawless and busy with many tasks such as preparation of the daily bread batch and the fresh pastries. This routine takes place with music in the background and good spirit from the team, but also with professionalism and active teaching.
